Curing Process

All Vesuvio Wood Fire Ovens require curing before use. At Vesuvio Wood Fired Ovens, we recommend you let your oven sit for 5-7 days after you have completed building it. If rendered, ensure render is completely dry before curing. Over the next 5 days, starting with a low temperature of approx. 100℃ and increasing this by 100℃ each day up to 500℃, build a fire and sustain it for the day. Try to maintain the temperature as you do not want a high temperature fire straight away. The best way to check the temperature is with an infrared thermometer. On the 6th day, you may commence cooking.

Cleaning

There is very little maintenance involved with a Vesuvio Wood Fired Oven. Cleaning of ashes is required occasionally & when the oven is cold using a brass wire brush. At no time should water be used to clean inside the pizza oven. The flue must be cleaned on a regular basis – we recommend cleaning the flue every 3 months.

Oven Use and Maintenance

Once you have installed and cured your wood fired oven, you are ready to start cooking – creating a vast array of delicious meals.
Starting Your Fire
It is important to ensure you build the fire in your woodfired oven correctly. This will ensure your oven reaches cooking temperature as quickly as possible and that you will also enjoy optimum cooking results.
Choose a well seasoned wood that has low moisture content such as box wood or iron bark. Aromatic wood such as hickory, mesquite or apple wood may also be used. Never use wood that has been treated.

Cooking

Vesuvio Wood Fired Ovens are extraordinarily versatile and provide you a vast array of cooking methods. What you can cook is only limited by your imagination!

Pizza

The ideal temperature for cooking pizza is 350℃. The flame should be rolling across the top of the oven and the dome should be white. This will ensure the topping, particularly the cheese, has cooked sufficiently and the base and edges are golden brown. Pizzas should cook within 2-3mins.

Baking Bread

The ideal temperature for baking bread is 180℃. Heat your oven to 350℃+, once it has reached this temperature, carefully remove the hot coals and let the oven temperature cool to 180℃. Your bread will bake gently and consistently by the heat retained within the wood fired oven.

Roasting

The ideal temperature for roasting is 230℃– 315℃. You do not want the wood fired oven any hotter than this as the meat will cook too quickly on the outside. The ideal way to achieve the perfect roasting temperature is to heat your oven to the same temperature you would for pizza, and then let the temperature fall. Once this occurs, you may push the hot embers to one side and begin cooking.

Grilling

Grilling is also possible in a wood fired oven. To create crisp, yet succulent meals, simply rake hot coals over the floor of your oven. Place your food (meat, fish, vegetables) on a free standing iron grill over the hot coals. Your food will cook perfectly due to the heat from the coals and the retained heat in the wood fired oven. Browning

Browning is also possible in a Vesuvio Wood Fired Oven. Perfect for meats and vegetables before adding them to another dish, simply place your food in a cast iron pan and the reflective heat from the oven will do the rest!

Sautéing

Your Vesuvio Wood Fired Oven is perfect for sautéing your pizza toppings, such as meat or seafood, or vegetables such as onions, for other dishes. Place a cast iron fry pan in your hot woodfired oven for a few minutes, add some oil in the heated pan and return the pan for a few seconds. Once oil is heated add your ingredients to the pan and again return to the oven for a few minutes. Again remove the pan from the oven, check and stir your ingredients and return to oven for a few more minutes if required.

Think of your wood fired oven as an alternative to your conventional oven and bbq.

Cleaning

Vesuvio Wood Fired Ovens are very low maintenance and require very little cleaning. Once you have finished cooking, allow the ash to completely cool (warm ashes still have the ability to cause a fire). Rake the ash to the centre of the oven and use your shovel to scoop the ashes out. Once you have all the ash out, use your soft bristle brush to sweep any remaining ash out. Do not use water to clean your wood fired oven. If there are food stains on the floor of the oven, they will disappear when you cook as the high temperature of the oven ‘burns’ the stains away.
